Owner and Pastry chef, Caitlin Mayo, opened Sugar Patisserie in September 2010 fulfilling a life long dream of owning a bakery. Caitlin knew from a young age that she wanted to be in the food industry. She was always fascinated watching her mother cook and bake at home. In 2006 Caitlin made the jump from hobbyist to professional by attending pastry school at VCC and continued on her apprenticeship to achieve her red seal in baking. Caitlin had a hunger for learning so she attempted to challenge her skills by competing in a number of pastry competitions including being the Canadian representative for pastry in the 2009 world skills completion.
Being born and raised in the Langley/Cloverdale area Caitlin wanted to bring the downtown pastry shop to the growing community that she calls home. Together with Monica Mayo, Sugar Patisserie was born. To this day the staff at Sugar Patisserie strives to make the best deserts and cakes possible. Caitlin’s passion for the craft encourages her to push beyond the workings of a conventional bakery by using local produce and hand made jam in her baking.
